This turkey and veggie mix is quick to prepare and very diet friendly. For a low carb alternative, do not serve with the rice.
Cooking Method: Skillet
Prep Time: 5 minutes
Cooking Time: 25 minutes
Ingredients
1 lb 97% fat free ground turkey
1 bag of frozen veggie mix (We prefer one with broccoli, cauliflower, red bell pepper, carrots, etc.)
1 small onion diced
1/2 cup of a lite balsalmic vinaigrette dressing (We prefer Ken’s Steak House brand)
Whole Grain Brown Rice (Cook according to the directions on the box or bag)
Preparation Instructions
Brown the ground turkey in a large skillet and drain any fat. Add the diced onion to the skillet with the ground turkey. While the onion is cooking place the frozen veggies in the microwave for about five minutes (stirring half way through) add the veggies to the ground turkey and onion mixture. Stir in the dressing and allow everything to cook through.
Serve on top of the brown rice

This wild mushroom chicken recipe is one of our favorites! As a tip, the mushroom sauce is also great as a dip or served over rice on its own.
Cooking Method: Skillet
Prep Time: 5 minutes
Cooking Time: 30 minutes
Ingredients
2-3 Boneless Skinless Chicken Breasts
1 can cream of mushroom soup
1 cup dry white wine (chardonnay)
1 .5 oz container of dried wild mushrooms
1 cup shredded skim mozzarella cheese
salt and pepper to taste
Preparation Instructions
In a microwave-safe bowl, heat white wine on high-heat setting for 3 to 5 minutes. Place dried mushrooms in wine and let sit for 10 minutes.
While mushrooms are rehydrating, cook chicken in a non-stick pan and cook for 10-15 minutes, turning frequently to keep from burning.
Remove mushrooms from liquid with a slotted spoon and in a food processor, process until mixture is coarse. Save liquid mushroom were soaking in.
In a bowl combine mushrooms, 1/4 cup of liquid, cheese, and soup. Mix well.
Pour mixture over chicken and cook over low flame until heated and the cheese is melted. Soup should be hot. (Great served with rice) Enjoy!
