Twilight Mushroom Ravioli

Hey everyone! I’m sorry it’s been so long since I’ve updated the blog. I know…you’ve missed having new recipes to try! In order to make it up to you, I would like to introduce a new category to the blog, “Recipes from Books.” My mission is to bring new low-fat, healthy recipes to you, so I decided to combine my recipe creation with another one of my favorite hobbies, reading. It never really occurred to me that there were so many amazing dishes that are mentioned in the books I love until a recent conversation with my good friend Wendy Norman from Lifestill Photography. With this new mission, I will be working to recreate recipes from some of my favorite books each week, adding a healthy twist to some fun new dishes.

So first up in this new category will be a recipe from a personal favorite book of mine, Twilight, by Stephanie Meyer. When looking at this book again with new eyes, it was very surprising to me how many food dishes are mentioned in a book that centers around vampires—who as well all know, don’t eat human food. The first dish I decided to recreate was the Mushroom Ravioli that Bella orders at La Bella Italia after being rescued from Port Angeles scum by Edward. Here is the passage from the book as a refresher:

Right on cue, the waitress appeared with our drinks and a basket of breadsticks. She stood with her back to me as she placed them on the table.

“Are you ready to order?” she asked Edward.

“Bella?” he asked. She turned unwillingly toward me. I picked the first thing I saw on the menu. “Um…I’ll have the mushroom ravioli.”
